Ingredients
- 2 & 1/4 cups all-purpose flour
- 2 & 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2/3 cup margarine or butter, more for greasing muffin tin
- 1 cup brown sugar
- 3/4 cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 & 1/4 cups milk
- chocolate eggs, enough for your muffin tin

- Muffin tin
- Paper or foil liners
- Stand mixer or hand mixer
Directions
Step 1 Preheat oven.
Preheat oven to 350 degrees.
Step 2 Grease muffin tin.
Grease muffin tin with margarine or butter, or line your muffin tin with paper or foil liners.
Step 3 Sift dry ingredients.
Sift together 2 1/4 cups all-purpose flour, 2 1/2 teaspoons baking powder, and 1 teaspoon salt.
Step 4 Cream ingredients in another bowl.
In another bowl, cream together 2/3 cup margarine or butter, 1 cup brown sugar, and 3/4 cup white sugar with a hand mixer or stand mixer.
Step 5 Beat in eggs, and add vanilla.
Beat in 2 eggs, one at a time, and then stir in 1 teaspoon of vanilla.
Step 6 Add milk to flour mixture.
Mix in flour mixture alternately with 1 1/4 cups milk, mixing until just incorporated.
Step 7 Fill muffin cups and add surprise.
Fill each muffin cup 1/3 full with batter. Place a chocolate egg in the center. Fill in the batter on top until each muffin cup is 2/3 full.
Step 8 Bake.
Bake for 18-20 minutes, or until golden brown, or cupcakes spring back when tapped in the middle.
Step 9 Eat!
