How to Make a Lattice Top Pie

Once the base of your pie is made, roll out a thin, circular piece of dough. This circle should be just a bit larger than the base of the pie. With a pizza cutter, cut 1-inch wide lines through the dough. Starting with the longest strips, place one strip horizontally on top of the center of the pie and one strip vertically on the pie. The strips should form a “plus sign” on the pie.

Place the next longest strip horizontally across the pie, just beneath, and even with, the first horizontal strip. Place the next longest strip horizontally across the pie, just above the first, center strip. Pull back the center horizontal strip so that it is folded in half. Place the next longest strip vertically to the right of the center vertical strip. Then, unfold the center horizontal strip so that it overlaps the vertical strip. Do the same with the next vertical strip to the left of the center vertical strip.

Continue in this way, pulling back each strip that was previously underneath so that it is weaved. It will be every other strip that you need to fold back.

By rolling the ends of the strips toward the cake, seal the edge of the crust. Sprinkle sugar or cinnamon on the outer edge dough to add flavor, fragrance, and color.

Place the pie in the oven on the top rack. Placing a pan on the rack beneath it will catch any crumbs that may drop.

Bake at 450 for 10 minutes, then 350 for 10 minutes, until the crust is brown.
