How To: Make lemon meringue nests

For Lemon Meringue Nests you will need the following:
Some ready made meringue nest,
Half a carton of crème fraiche,
A couple of spoons of good quality lemon curd for filling,
Raspberries,
Icing sugar,
Some mint.
You mix the crème fraiche with the lemon curd evenly in a bowl. Then you take the meringue nests and put them on to serving plates. You then put the lemon mixture into the middle of each nest. Then decorate each of them with about three raspberries apiece and dust them over with the sugar. Finally put a sprig of mint on each and they are ready to eat.
