How to Make a strawberry cheesecake

1 Cup graham cracker crumbs
2 1/2 tbs. unsalted butter
1 1/2 tbs. sugar
Combine the graham cracker crumbs, butter, and sugar and mix well.
Press onto the bottom of the springform pan and back for about 8 minutes, until golden brown.
2 1/2 pounds of softened cream cheese
1 1/2 cups of sugar
1 shaved lemon
1 shaved orange
1/2 tsp. vanilla extract
Put both lemon and orange zest into the cream cheese
Pour the sugar and vanilla into the bowl
Beat until light and creamy
3 tbs. all purpose flour
2 egg yolks
1/2 cup sour cream
Add your flour, egg, and yolks one at a time into your bowl.
Mix everything well.
Add sour cream.
Mix until smooth.
Butter the sides of your pan.
Pour your mix into the pan and bake for 12mins at 500 F. Then reduce oven temperature to 200 F and bake for 1 hour more.
Cool cake over night.
2 pints fresh strawberries
1/2 cup sugar
1 cup water
1 tsp. finely grated lemon zest
combine berries, sugar, water, and zest.
Cook until berries are soft, and the liquid is thick for about 10 minutes.
Let the sauce cool and pour over cake before serving.
